The story of why we started, what drives us, and where we're headed.

The Beginning

It started with a question that seemed obvious once it was asked: why is it so hard to find a genuinely fresh, locally grown mushroom on Long Island? We have the land, the climate, and the appetite for great food — but the mushrooms at the grocery store come from hundreds of miles away, sitting in cold storage long before they reach your kitchen.

True Mycology was started to fix that. We grow premium edible mushrooms right here — Blue Oysters, King Oysters, Lion's Mane, Shiitake, Maitake — and bring them directly to our community, as fresh as they can possibly be.

Our Mission

We're not trying to be the biggest mushroom company in the country. We're trying to be the best one in your neighborhood. That means showing up consistently at your local farmer's market, being honest about how and where we grow, and building real relationships with the people who buy our food.

How We Grow

We grow indoors using a controlled environment that keeps conditions optimal year-round. No pesticides, no synthetic inputs. Just substrate, spores, humidity, and time. Every variety we grow is harvested at peak freshness and gets to you quickly — because that's the whole point.

We're transparent about our process because we think you deserve to know what you're eating and where it came from. No jargon, no greenwashing — just a real local farm doing things the right way.

What's Next

We're launching our first fresh edible lineup soon, starting with a presence at Long Island farmer's markets. As we grow, we plan to expand our varieties, and eventually develop a line of functional mushroom supplements for those who want to go deeper.
